Each piece answers a practical serving need rather than a formal idea. One dish holds ice above a hidden reservoir, so melted water is kept away from the food. A second version holds dry ice to cool dishes such as sushi and release a light vapour. Another item keeps caviar on ice without mixing the two. Plates with an irregular dot texture separate meat juices from the food. Small porcelain trays allow guests to eat comfortably while standing. Reactive glazes were developed for the collection.
